If you ever figure it out, please post the solution. In Mavericks you could edit the DefaultFonts.plist file but doing that with Yosemite does nothing...it still displays Helvetica Neue 12. It's infuriating that Apple finally brings Notes into the current century and then doesn't have any regard for people with vision problems or who may just not want to be forced into a particular font/size.
Send Apple feedback. They won't answer, but at least will know there is a problem. If enough people send feedback, it may get the problem solved sooner.
Thanks, Eric, but I had already gone to the feedback page and Notes is one of the few Apple apps not listed there. I'm sure they wouldn't pay any attention, anyway, but I would have posted if they had Notes listed.

I can confirm the directions linked by @cabavyras work on Yosemite 10.10 (http://www.tekrevue.com/tip/how-to-change-the-default-fonts-text-size-in-os-xs-n otes-app/). Make sure you quit Notes first, and also make sure you go through all the save confirmation prompts in Terminal (there's an extra unexpected one confirming file location at the end).
