So, I found my old Apple Bluetooth Headset, but when I turn it on and pull up the bluetooth screen on my iPhone, it won't show, is there a reason for this? I would love to be able to use this headset.

Turning off the headset, then holding the button for eight seconds will make the headset discoverable (you'll hear the startup tone and five quick beeps to indicate that it is discoverable). This should allow for your iPhone to see and pair with the headset.
