stop text rotating or flipping with shapes

How can I stop the text contained in a "Shape" in Pages from following the rotation or flip etc that is applied to the shape.

I'm trying to do a sort of 'flow chart' with arrows, on those fat arrow shapes I have text, all is well provided I just use the left to right point arrow, but rotate the arrow to point down and the text rates too, OK, just about still usable.

....but now flip the arrow so it goes right to left and suddenly I have mirror writing, or rotate the arrow 180 and its upside-down . Cannot seem to find any help, it seems the 'default' it to end up with something unintelligible. There must be a way or do I have to draw my own shapes or not use the arrow as a text box and draw a separate box and 'group' them.

There must be an easy way, but if there is, its well hidden in the new UI

Thanks

Stephen
