I created a new library on another disk, but the old, main library always opens. ???? I hold down option, select the new library, but the old library opens up with none of the music I placed in the new one.

Did you also change the location info for your iTunes library in iTunes/Preferences/Advanced settings?
Usually the path on your HD looks like this: /Users/<Username>/Music/iTunes/iTunes Media
change it to the new one by clicking on the button right next to it.
