My son recently downloaded the FindMyPhone app and used my iTunes account ID and PW. He is now able to see all of my texts and iTunes downloads from the app store. I'd like to change this so he can no longer do this. Thanks in advance.

Get your son a separate apple id.
then log him out of imessage/facetime/icloud/appstore and sign him back with his new id.
Erase his phone, create an Apple ID for your son, set up the device with his Apple ID and use family sharing if he wants to use your purchases:

Apple - iCloud - Family Sharing
Don't forget to deactivate "Find my iPhone" before you erase it, to be able to set it up with the new Apple ID.
