If you are referring to your phone's contacts, they are not in iTunes. They are located in your phone backup, if you are creating that in iTunes, but it is not a file that you can view and edit. The only way to be able to see your contacts on a computer is if you sync them to a supported application on the computer, such as Address Book, Windows Contacts or Outlook. You can also use a cloud service, such as iCloud, Yahoo or Gmail.
