She gets my emails, pics etc. and I get hers. Do I need to delete the icloud on one phone and setup a new account? If so how do I go about doing this?

Well you have a couple of options
1. Email - you can opt to get another email or your wife can - switching to the new email by either one of you can stop the cross email message reception
2. As for deleting the account - no - all you need to do is sign out on the device if you decide to go for two separate accounts - in the long run it is simpler that way (speaking from personal experience)
