My screen won't turn when I turn my phone to watch video or text.
is there something in settings I need to change so my screen will turn sideways when I turn my phone to watch video or text?

It seems you are unable to rotate your display to view content. Have you checked your Orientation Lock settings? The following article explains the feature in greater detail:
