Go into Settings>Touch ID & Passcode, and turn off the switches there. You will only be using the passcode then.

Yes. In fact to use Touch ID you need to set a passcode. when unlocking your phone simply swipe the unlock bar instead of pressing your finger on the home button. It will then let you enter your passcode.
Further, you can turn off touch ID in:
Settings->Passcode and Touch ID.
