Q: is there a way to view the dates when backups were completed? Preferably before restoring the phone?

Trying to back up or recover photos that no longer appear on the iPhone or iCloud shared section. This is for an iPhone five, latest update version.

iPhone 5, iOS 6.1.4

    Do you have multiple backups in iTunes on a Mac or PC?

    If that is the case open the iTunes preferences & choose the devices tab.

     

    The date may be listed next to the device backup, if it isn't shown hover over it with a mouse, it may popup a tooltip with the date.

    iTunes will overwrite them by default, so if you hope to preserve a backup, right click (or ctrl+click on a Mac) & select the archive option for the backup. Next time iTunes syncs it will not overwrite that backup.

     

    If you are referring to iCloud backups I do not know if you can have multiple backups stored. You will also need to explain more if you mean Time Machine or another sort of backup.
