I'm planning to buy an album for my boyfriend over the itunes store.. so will it work if I sign into his account on my laptop and change the card details to mine, buy the album then sign out.. will the album come up on his laptop next time he goes into itunes?

For brevity's sake, I will not try to list all the reasons that is not a good idea.
Just go into your own account and gift him the album using the normal iTunes gift procedure:
