This drives me nuts. I checked Google and the hotkey should be ctrl-U but this doesn't do anything. F2 doesn't work either. Of course I'd rather have it be one key and not a key combination but having to always use the mouse is frustrating.

You click on the cell and edit it. If you still have difficulty please post in the Office for Mac Product Forums
Clicking (once) on a cell allows you to replace the contents, double-clicking on a cell should put you in to edit/insert mode where you can edit the existing contents. The other way of doing it is to click once on a cell and then go to the Formula bar and edit it there.
