If delete icloud from ipad 4 ios 8, will everything be there the same when sign back in?

So My problem is this, I want to change my email associated with my icloud account to the same one i just updated with my apple ID, along with the new password ofcourse. BUT after i did the apple one suddenly my icloud account still has old email BUT uses the new password?

well regardless I found out the only way to do so is to delete icloud from my device, (iPad 4, iOS 8,) and then sign in fresh and during the sign in I will have oppurtunity to update email etc...

***BUT- WILL ALL MY STUFF/PHOTOS/ETC... BE SAFE AND ALL HERE AS IF NOTHING HAPPENED WHEN I SIGN BACK IN???***

I cannot take chances with losing stuff and do not have another device/computer to back up to as plan B not to memtion im to impatient for all that stuff lol.

If someone helps me do this right I would love to offer them anything I have in return, like Free clipart i usually charge for or some paper, some cool ipad homescreen wallpapers with the app shelves and all...If your interested leave your email and we can chat, but please someone help me!!!!!
