A little more information, such as what happens when you try (and exactly are "signed out of") might be helpful.

I followed the instruction's on the website to change apple id eg signing out of apple stoe etc and still the edit button doesn't show on my id settings my wife did it and it worked straight away

Are you attempting to change a @icloud.com, @me.com,@mac.com basically an apple domain

Or is it an email address such as yahoo, hotmail, etc.
