How do I get notes created on iphone to stay on my phone?

I have an iPHone 5 and was syncing through icloud - When I created a note on my phone, it would turn up in my icloud account in mail.

I recently turned off the syncing for notes via icloud cause I kept inadvertently deleting notes I wanted to keep on my phone from the icloud email account.

Now all the notes I had on my phone have disappeared and I can only find them on my icloud account online.

How do I get the notes created on my phone to stay just on the phone? and how can I get the notes that are only in iCloud back onto the phone?
