You cannot do that because Numbers does not allow circular reference of any depth.
If I understand it correcly, you are wanting something like the following table, which preserves data input on previous days:
The closest I can think of is to build a master table contaning data for every date and filter it to show only the data for today. Like this:
which is actually a filtered view of:
where Table 1 is just a mirror table of Master:
