If you want to delete Safari browsing history from the last hour, today, or today and yesterday: from the menu bar navigate to Safari > Clear History and Website Data... and then click and make your selection from the pop-up menu:

You can choose to delete individual history items from one day, or delete an entire day at a time. Click the small arrow to the left of each line to expand or collapse the daily items:
To delete a block of consecutive items, hold down the Shift key, click the first and last items, and the items in between will be highlighted. You can also hold down the Shift key and use the Up/Down arrows to make your selections. If you accidentally click on an item you don't want to delete, hold down the Command key and click on it to deselect it. Press the Delete key to delete your selections:
To delete non-consecutive items, hold down the Command key and click on individual items. You can also combine the two methods by choosing a block of consecutive items with the Shift key, and add non-consecutive items using the Command key:
If there is a particular website that you want delete all occurrences of, you can do a search. Enter the keyword(s) in the search bar and press the Enter key. Press ⌘-A to select all the items. If search returns a few items you don't want to delete, make individual selections as before. Alternatively, you can refine your search terms:
