ITunes does not create MP3's of my songs when I ask..it looks like it is, but then the file format is still not correct

Can you provide more details - what is the original format of your media, how are you creating the MP3 versions, and what are the issues with the results?

When iTunes creates a version in a new format, it leaves the original in place. Make sure you are looking at the newly created version. It will have the same title but will have the new format and will have today for "Date Added."
