How do I change the email that the verification link gets sent to? I accidentally typed in the wrong email and now I cant verify my Apple ID

You should be able to correct your email address by logging into the account via the 'manage your Apple id' button on http://appleid.apple.com - a verification email should then be sent to that email account instead
