I downloaded an Ibook in Finnish and need to change to English...How do I do that?

You can't change the language of a book. What language does the book's description page in the store say that it's in ? If English then try deleting it from the bookshelf in the iBooks app and redownload it via the Purchased tab. If it redownloads in the wrong language then try the 'report a problem' page to contact iTunes Support : http://reportaproblem.apple.com
Or you can try contacting iTunes Support via this page : http://www.apple.com/support/itunes/contact/ - click on Contact iTunes Store Support on the right-hand side of the page, then Purchases, Billing & Redemption
If the book's description page says that it's in Finnish then though purchases are considered you can try the above 'report a problem' page to contact Support and see if they will refund or credit you.
