Can you please describe "wonky"? 😉
Whenever I type on the Windows 7 Ultimate side of Bootcamp, the cursor will just jump somewhere else in the middle of typing. Also, Windows crashes sometimes out of nowhere.
If you are on a portable Mac, with a trackpad, your palm/wrist may be accidentally touching the trackpad causing the cursor position to jump.
Yes I am using a MacBook Air. BUT there is no setting for trackpad in Windows when the manual says there is!

There is no such path on Windows 7 Ultimate side of Bootcamp .
if the apple hardware drivers was not installed which adds the bootcamp control center then you should install it
The bootcamp control center is there but just not a trackpad option on it.
1. Can you check Control Panel -> .Hardware -> Device Manager for any unknown devices (yellow triangle with an exclamation mark)?
2. Repair BC drivers using Boot Camp: Install or repair Boot Camp drivers.
