If you use the Apple Notes app, and use iCloud services, then these should be stored in the Cloud. You can check by opening Notes in iCloud (web version) and looking to see if the same notes on your phone are the same in iCloud.
On your phone, you can go to iCloud settings and look to see if the Notes app is switched on to sync.
