No services available on OS X due to hostname. PLEASE HELP!

Hard to know exactly what's wrong but it sounds like you would like to go to Server.app locally on the server or remote from another Mac and correct hostname, IP address and a few similar things there. In Server.app click the server's name just below the headline "Server". On the tab "Overview" there's a line with "Hostname: <a hostname>", to the right is a button "Edit" (be careful so you don't happen to click the one for "Computer name". YOu will then get a bunch of dialogue boxes where you fill in the correct hostname and a few other things. The system will then in the background correct a bunch of settings regarding the different services for you so that you don't have to know all of them by heart.
