Is there a way to sell several eBooks as a bundle in iBooks?
iPad, iOS 8.1.3
I'm not sure I understand: Do you mean each "ebook" would be combined into a single iBook, or do you mean you want to sell a series of iBooks at the same time?
I mean, if you have a series of different eBooks, can you sell it as a bundle the same way you can bundle apps in the AppStore.
I know that Apple is making bundles of eBooks in iBooks, but is it possible as a producer of eBooks for iBooks to make a bundle of your own eBooks and sell it in the iBooks Store?

I don't think there is any way to do that. Each book has to be submitted and approved independently as far as I know. You could try asking via the contact info given at the bottom of the standard faq:

I notice that the seven volumes (units) of E.O. Wilson's "Life on Earth" are sold separately but in my Library, they appear together as a series. Is this what you are referring to? Here's a screen shot:
