I'm relatively new to mac and am still getting to grips with how it all works.
I'm trying to write out a chemical equation on one line, but am struggling. Thought it might be clever to use numbers, but now I can't put an arrow into the equation.
Any help would be appreciated!

Am not quite understanding the issue. Are you typing a chemical into a single cell or three or more cells with the arrow in its own cell?

Sorry to confuse you. Hopefully this will be a bit more clear;
Managed to use Insert/line/ with arrow head as is in pages, but then the whole equation wouldn't fit on one line!
Ive tried to use a number of cells with one currently blank to insert an arrow and have managed to fit it all on one line using a table, but now can't insert the arrow using Insert/line/ with arrow head.

I think you will have better luck using a character arrow rather than a shape.
→ I chose "Show Character Viewer"
Lots to choose from.

select the menu item "Edit > Special Characters...":
Do what T Quinn suggests, T_Lou, or Wayne's suggestion to go Special Characters via Insert.
You then can do it all in Pages. Below was copied directly from Pages to here. The little arrow was dragged over from the Character Viewer. You then build a little library of your reactions and you can then quickly modify them.
C6 H12O6 + O ⇒ CO2 + H2O
