You should, but your TV should also support more than one HDMI cable and you could connect to both the Apple TV and the DVD player. You would just change your input to the TV from one device to the other.
You can but depending on how often you need to switch the cable you could cause problems with the connector.
If your TV only has the one HDMI input (or else the others are in use) you could look into getting an HDMI switch. Basically the HDMI impute port on the TV would connect to the HDMI output on the switch and the Apple TV and DVD players would connect to the inputs on the switch. Then you would use the switch to select which device you want connected to the TV. No need to mess with the cable.
