How can I make the dock icon for an application launch the app with a certain command line argument added?

E.g. I want an icon to launch Firefox with a "-P MyAlternateProfile" argument.

Try open Firefox.app (or just type in open <space> and drag the app into the Terminal window). Whether you'll be able to specifiy the alternate profile argument, I have no idea, since I don't use Firefox. See the manpage for open.

No, I want an icon in the dock to launch it - what does the terminal have to do with this?

Basically, the question is how do I get an icon in the dock to run the command "<path to executable> <arguments>" ?

Sorry, I misread your post. AFAIK, you can't. You could create an Applescript or Automator action to do what you want.
