Should I be using the setup / migration assistant?
Any recommendation on the hard drive enclosure brand or anything should be ok?

Just follow the directions in the link I posted, use setup assistant and select the external drive you wish to transfer from. I would trust any external enclosure from OWC http://eshop.macsales.com/
