can i take out hard drive from my dead 2011 imac put it in an enclosure and use it to setup my new imac?

Absolutely. Move your data to a new Mac - Apple Support And when you're done and are sure that everything works you can use it for extra storage or backups.

Will I get the same setting as my older Imac (calendar, notes, applications,widgets,etc) and not just files even though I never did a time machine back up on the hard drive?
Should I be using the setup / migration assistant?
Any recommendation on the hard drive enclosure brand or anything should be ok?

Pretty much everything will be transferred with the exception of the OS and it's files. Just follow the directions in the link I posted, use setup assistant and select the external drive you wish to transfer from. I would trust any external enclosure from OWC http://eshop.macsales.com/

Unfortunately, no. the mac just shut down while I was using it and won't turned back on.
