Will Interstellar (like, lets say, The Dark Knight or The Dark Knight Rises or Tron: Legacy) movie on iTunes in Digital HD format (1080p) include uncut IMAX sequences in their full aspect ratio? I mean these extensions on the full screen.

You will have to ask the film studio/rights-holder (we are fellow users here on these forums), or wait to see if after it's released any reviews in the store mention anything about it

Unfortunately, No. For me, Dark Knight Rises in 1080p have 2.35:1 aspect ratio for the whole movie. Not the 1.78:1. The real IMAX aspect ratio is 1.43:1. They format it to TV aspect ratio.
