You don't. The Bluetooth on the iOS devices is not designed to pair with other phones for the purpose of data transfer. You will not be able to do what you are trying to accomplish. The iPod will only support the Bluetooth profiles listed here. iOS: Supported Bluetooth profiles - Apple Support
You can disregard that link, it is for devices that run iOS. The 7th Generation Nano only supports A2DP/AVRCP (Stereo Bluetooth and controls) and Low Power (like for heart rate monitors. It does not support File Transfer Protocol.
Sorry, I missed the Nano reference.
