You may be able to change or reset the password on this old iCloud/Apple ID account, even if you no longer have access to the email address associated with it. Once the password is changed/updated, you should be able to log your iPhone out of the old iCloud/Apple ID account and log in to the correct new account. I actually do have access to my actual email, it's just that the email address is no longer associated with Apple, therefore Apple doesn't recognize it as a valid account. Because it doesn't recognize, when I try to reset the password to it on the Apple login page, I simply get a notification that "this account doesn't exist." Which is correct. The weird thing is how my iPhone automatically associated that old address/account with my new phone, when I wasn't using it anymore. I've never been able to sign into it or out of it on my new phone since I first synced it to my iTunes.
Incidentally, I have no problem using iTunes on both my phone or my computer, since that always uses my newer, active account.
