Welcome to the Apple Support Communities!
I understand that you would like to import your photos that have on your iPhone to your Mac and stop iTunes from syncing your photo albums from your Mac back to your iPhone. To accomplish this, I would first suggest importing your photos to your Mac using the instructions located in the article below.

After your pictures have been imported and you would like to removed your synced photos and albums from you iPhone, please follow the instructions located in the next attached article.

Delete synced photos
- In iTunes, locate and click on your device.
- Click Photos.
- Choose "Selected albums" and deselect the albums or collections you want to delete.
To delete all synced photos, deselect "Sync Photos from" and, when asked, click "Remove photos." - Click Apply.

Mar 20, 2015 8:40 AM in response to LOLKimmyby Ralph9430,Yes, you can tell iTunes on your computer to not transfer albums to your iPhone when you sync. If you have the photos on your computer you do not need them all on your iPhone. Do a sync to iTunes on your computer. But before clicking on Sync deselect as many photo albums that you can do without on your iPhone. Then when you click on Sync or Apply the albums will be deleted from your iPhone but they will remain on your computer.
