In order to sign out of your iCloud account that had a ID change, you would need to change the account back to the original. The reason for that is probably due to the Find my device feature and it needs to verify and if that iCloud account does not exist because of the name change and you cannot sign out. Changing it back is pretty easy and should not ask you to verify but once you change it and sign out, you can change it back to what you want it to be.
