I think I would be too apprehensive to introduce beta to my iMac as I am not the most tech savvy and it is currently running very slowly.

An iPhoto Library is good for 1,000,000 items, so no, 60k is not an issue for it. I have a 58k library with no speed issues.
How much free space on your HD?
Multiple libraries are inconvenient and not necessary.
Before taking such drastic and unnecessary steps with iPhoto download and run Etrecheck. Copy and paste the results into your reply. Etrecheck is a diagnostic tool that was developed by one of the most respected users here (and recommended by Apple Support personnel) in the ASC to help identify the more obvious culprits that can slow down a Mac.

I have a 2TB hard drive and have used about 1.3TB.
I have just ordered more RAM to take it from 4GB to 12GB.
Anything else I could try?
Rebuild the Library:
Option 1
Back Up and try rebuild the library: hold down the command and option (or alt) keys while launching iPhoto. Use the resulting dialogue to rebuild. Choose to Repair Database. If that doesn't help, then try again, this time using Rebuild Database.

There's one thing I noticed:

I suggest you reboot every couple of days to clear caches and temp files. An occasional boot into Safe Mode, Mac OS X: Starting up in Safe Mode, will clear additional system caches and run repair routines. It's not needed often but certainly can't hurt.
You definitely have a memory problem as indicated by the size of the Page-outs. The ordered memory upgrade should correct that and it might have a strong influence on your iPhoto Library slowness.
I know I've had issues with the Adobe ARM software for keeping track of updates, etc. I've remove them from my user launch agents and you might try the same:

Also, should I be concerned about the Problem System Launch Agents and the Problem System Launch Daemons which are shown as 'killed'?
Since all 21 were killed due to memory pressure I'm guessing that your new memory will hear them up
