It looks like iTunes rejects FLV files, which means it can't convert them to MP3?
If there a way to get FLV files into iTunes? If not, I guess I can do Handbrake FLV to MP4 and then iTunes MP4 to MP3. But that's impractical.
Handbrake doesn't convert from FLV to MP3 either.
Is there some way to go from FLV to MP3?

Correct, iTunes does not do anything at all with Flash Video files. In fact, there is some interesting corporate history around that:

However, there are third party products that can create MP3s from FLVs. A web search on "flv mp3 converter" will turn up some options.
I'm quite sure that iTunes doesn't support converting FLV to MP3 directly. But HandBrake should be able to convert FLV to MP3. I have no idea why it doesn't work for you.
I know another way that lets you convert FLV to MP3. It also applies to convert FLV to WAV, AAC, M4A, AIFF, ALAC, CAF, WMA, etc.
