Installed 10.7.5 on the IMac and now all the data (calendar, contacts, etc) is in iCloud. When I sign out from iCloud, I lose data in both of those.
I have Yosemite on the MacBook Pro and 10.7.5 on the IMac - no other devices.
How can get back to all the data on each of the devices?
You do not lose any data when you sign out, it's in iCloud even when you are not.
If you want it back sign out, take the option to keep the data on your Mac.
I went to System Preferences - selected iCloud icon - and "signed off". I received a message that said if I turn iCloud drive off, all documents stored in iCloud will be deleted from this Mac. I want to lose the docs.
Sorry - I meant to say I don't want to lose the docs.
Then either don't sign out of iCloud, or copy the files from iCloud drive to another location on your Mac using Finder.
You can not access things in your account when you are signed out, just like any other account (you can't access your bank account without signing in)
Make up your mind as to whether you want to use iCloud or not, it is designed to be switched on permanently so that your iPhone etc all stay in sync.
What 'documents' do you have in iCloud, what did you use to store them in iCloud?
How does one find out what documents are in iCloud? I prefer not to use iCloud as I do not have an iPhone.

None of us can know what you chose to save in iCloud, second sight is not amongst our abilities, you saved them there, you will know.
Calendars and Contacts are not Documents, I'm tired of guessing so please tell me what you actually mean when you say "Documents"
