Is there a huge difference in the read/ write speed between the two? I purchased the 6 core 3.5 model from the Apple retail store. I'm a little curious if i should of went for the 512 Gb model. Am i missing much in terms of speed?

No. They are close to the same.
Some of the readily-availabe SSDs at 128GB are measurably slower. As Kappy says, the 256 and larger are generally all abundantly fast.
Generally the bigger they are the faster they are, the reason is that all other things being equal the larger drives have a greater number of chips making up the total drive, more chips = more pathways for simultaneous I/O operations.
But all other things may not always be equal.
That's not the issue. Its extremely fast. the issue is spending the money for externals to match its speed. I settled for anything above 130 meg /sec which is better than firewire 800.
