When I send a message from my iPhone to other iPhone users why do they receive it from my email not number

What do you currently have selected in Settings > Messages > Send & Receive > Start New Conversations From set to ? if your email address then tap on the phone number line instead to select it

I'm having the same issue, but i'm not seeing my phone number listed and it will only let me type in an email address. I'm showing my phone number in my apple account.

Your iPhone is active with a carrier, and have you tried logging out and back into that account on the phone ?
