Can I pick and choose what to clone with CCC

I bought a 2009 17" MBP "used", and it has a ton of files from the other guy on it, everywhere. For some reason it only has a 250 gig HD. I thought 500 was standard, maybe he changed that out. Anyway, I was hoping to totally clean out his junk and install a larger hardrive. My plan is to clone it onto the new hardrive. But I don't want to clone all of his junk.

Can I pick and choose what to clone with Carbon Copy? I do not have the OS (10.6.8) install discs so. I really just want to put the OS back on the machine then I can load whatever I want and the machine would be clean.
