iPhone 5 stuck on white Apple logo screen; can't get software update to finish for it to restore. Can I restore without update?

Phone has froze on white Apple logo screen. Have tried to restore by holding home & lock buttons to get to "connect to iTunes" screen but once it starts to download the software update, after about 45 minutes, server error comes up. I've tried this several times. Is it possible to restore the phone to get it to work once again, through iTunes or iCloud without updating the software? It's been froze now for over 24 hours.
