I was using the business card templates and trying to do a change to replace it with my name.
I highlight the text box and then press CMD+F to bring up the find/replace dialogue.
Typing in the default text they have on the template produces a not found response.
Seems this is another bug or feature that was dropped from earlier versions of pages.
Has anyone gotten around this?

In Pages v5, Find does not work on Placeholder text. If you click on a sample name and its background goes salmon colored on you, it is a Place holder text field. If you try to Find on business card name fields in Pages '09, that fails too, though they do not appear to be placeholder text fields.
1. Use the earlier version
2. Did you copy and paste the text into the Find field?

I typed the name in, but found that if I copied the name in from another location it didn't work either.
I tried a find/replace on a document I created with normal paragraphs and it seems to work fine there.
You must be correct with place holder text.
