I want to upgrade my Macbook Pro's RAM, but I wasn't sure how big of an upgrade I could do. I read that it has a limit of 8 gigs, but I also read that it could go as high as 16 gigs. Does anyone know?

If you go to the Crucial website and download the scanner, it will report back to Crucial and then Crucial will give a complete report on what you can do memory wise on your Mac.
Choose About this Mac from the Apple menu and check the processor.
If it's a Core 2 Duo Mac, the limit is 16GB.
If it's an i5 or i7 one, the limit is 8GB.

No. The processor is soldered in.

So doing that by just swapping out the processor is not possible. However it is possible but would require changing the entire logic board to i5 or i7. I'm not sure you'd get the difference you expect and it would be difficult, not for the faint of heart, and expensive.
If you want a huge speed jump then drop an SSD in there. Yours would take an 6 G.
