I was sending SMS' all day and suddenly became an iMessage with a contact. I want to revert to SMS, turned off iMessage but in contact will only allow iMessage now. help

I've been sending SMS' all day to husband and then suddenly received an iMessage from him. To reply I had to turn on data to reply. I don't want to send iMessage, I want to send an SMS and have turned off iMessage but when I got to messages, it hasn't reverted to text message and will only allow iMessage. Have deleted all history and now it's ok but I shouldn't have to do this. How do you flip between sms and iMessage with someone please
