how to create shaped text in Pages latest edition, for example if I want to create a school 'stamp' with the citation typed around in a circle?

Not directly possible in Pages itself. Consider Art Text 2 Lite (free), or Art Text 2 ($20USD) in the OS X App Store — as helper applications.
