the mail app on my iPad is crashing when I open it. Just started doing this. Why?? If I delete the account and reinstall, will I loose the mail on my macbook air since they sync?

By default GMAIL uses an IMAP e-mail. So no, your e-mail won't get lost on your Mac. The sync is for the individual Apps. As long as Mail on the iPad is set to connect to GMAIL, and you aren't using a GMAIL specific App, you should be fine. Please in the future post iPad questions in either the iOS or iPad forum:
