I'm interested in replacing my old 500GB TC with one of the newer models because I'm out of space and the new one would improve router efficiency. What would I need to do to replace the old one with the new one?

Correct. As you can see, your old AirPort Time Capsule will keep your old backups, but note that you will change the Time Machine drive when you get the new Time Capsule, so maybe it is worth the effort of transferring backups.
