How to change back to black text and white background? Using iPad air and ios 8

How do you change back to the default black text white background. My iPad air jumped to white text and dark background and the only way to get back to default is to reboot. Does anyone know to get back to default w/o rebooting?

Yes, that is the dilemma. My screen jumped to the white text/dark background and the only way to get it back is to reboot. Just thought it was strange it did that and there is no way to fix that. It has happened 3 times.

If this is on every app then Settings > General > Accessibility > Invert Colours 'off', and check what Settings > General > Accessibility > Accessibility Shortcut (i.e. a triple-click of the home button) is set to.

If just in iBooks then open an ibook and tap the AA icon top right and change the theme and auto-night theme (the option that you get via the icon may not show for every book) :
