I have been using my mac.com email for years. I went to create another email address for another purpose and it automatically turned it into an iCloud account. What will this do??? Is it going to screw things up with how everything has been working? I am so confused by this iCloud stuff...

This is what happened: I wanted to create another email address. I went to Mail >Add Account. You never answered my question, you had an iCloud account (your .mac address) then you tried to open another and said "it automatically turned it into an iCloud account."
Which (as it was already an iCloud account) does not seem like a big deal to me. Perhaps a clearer explanation of what you did, and what is the result?
By the steps that I went through to sign in to create another email address, I don't understand why I input my original email account information under "Add Account" and then the iCloud Account window showed up and then disappeared without letting me create a new address. It's like something happened with my original email account, like it "added" it to iCloud - which it should already have been a part of.
I'm wondering why it did that, what it changed from or to, and how to create another email address under my Mail Accounts.
I don't KNOW the result, and it scares me!
What is the result, what exactly has happened, do you now have 2 iCloud accounts, or 2 iCloud email addresses. What has changed.
You do not enter your iCloud login in order to create a new iCloud account, so I have no idea what you actually did from your description. Perhaps if you told me what 'steps' you took rather then just referring to them as the 'steps'
That's what I want to know. I'm hoping it's not a big deal, and that NOTHING has changed with my email account. The iCloud Account window showing up and requesting my ID and not sending me to a place where I could create ANOTHER email address has me wondering what the h*ll happened. I don't know how to find out what happened. All I wanted to do was add another email address. I thought everything I currently have was already automatically transferred to iCloud when it switched from MobileMe a few years ago.
Unless you can tell me what you actually did rather than 'steps' I too have no idea.

Sounds like you created an iCloud mail account out of your AppleID (which is I assume your mac.com address). This would normally be an IMAP account which you can access from any of your devices or on the web via iCloud. If your mac.com account is POP3/SMTP then I'm a bit surprised if it worked, but I just don't know enough of the details here.
Sign in to iCloud on the web (iCloud.com) and see if it shows up as a mail account.
Ok, maybe we're getting somewhere now. I signed in to iCloud.com, and yes, all my emails showed up there in the mail program (egads, I hope I'm using the correct terminology here.) Is there any reason I should be concerned about anything weird happening at some point? Is there any difference between my mail program on my iMac and the mail on iCloud?
I'm still not sure how to create another email address, either. I bought a business and need a separate email address for it.

Once you have created an iCloud account and chosen an @icloud.com address to go with it you can't change the address (short of creating an entirely new account).
However, all is not lost. You can add up to three 'email aliases' - these are additional addresses (not accounts) which deliver into the same inbox as the main account. (In fact it's a good idea to give out alias addresses, rather than the main address, because if they attract spam you can easily change them.)
You should be aware before you start that once you've created an alias you cannot turn that address into a full iCloud account or move it to another account.

If you create a new actual account you can sign into it in System Preferences>Mail, Contacts and Calendars so that you are still signed into the original one.
However, if you want my advice you won't use your iCloud address for business. It's not designed as a business service, and has no guaranteed uptime or direct telephone support. And giving an iCloud address out marks you as too cheap to pay for a proper email service, which may not give a good impression. You could get a domain to match your business name (it's not expensive) and get an email service associated with that.
