I'm having issues with sync notes. Everytime I go to backup or sync my 16 GB iPod Touch, the iTunes shows Syncrinizing Notes, but takes way too to long to where iTunes shuts down. I'm running the iTunes on a Windows 7 system powered from a Dell computer. Is their anyway to solve this problem?

As I understand it your iTunes seems to be becoming unresponsive when during the contacts syncing portion of the process. I would use the troubleshooting for sync issues located in the following article:
Troubleshooting Sync Services on Windows with Microsoft Outlook 2003, Outlook 2007, or Outlook 2010
