Can I create a bootable version of Mavericks or Yosemite on a removable drive?

There are applications that I rely on that have not been authorized for my iMac (21.5" Mid 2010 3.o6 GHz Intel Core i3 with 12 GB of RAM running 10.8.5). Until I can afford to upgrade to a newer iMac, can I create a bootable Mavericks or Yosemite volume on a USB flash drive?

iMac, OS X Mountain Lion (10.8.5), iMac 11,2 Intel Core i3 - 12 Gb RAM

Yes you can - you'll need a cull copy of the 'Install Mac OS X' file that gets downloaded to the Applications folder from the Mac App Store. Once you have that, you can use this software to create a bootable USB installer disk: http://liondiskmaker.com/ (there are other ways of doing it, apparently, but this software automates the process and makes it very easy to accomplish).
